Starters and Side Dishes Chat / Pakora sauce

any suggestions would be most welcome.

i have made pakora sauce...tom ket with mint sauce etc....but my local indian restuarant serves with a yellow and its quite a sweet sauce to accompany chicken pakora...its fantastic and wonder if anyone has any ideas on what would go into making this.
id love to try this at home

Hi,
I'm a great fan of this site and have made quite a few curries...

am curious of opinions of whether to marinade defore adding to recipes

ive followed sauces and added chicken but sometimes i think BIR must marinade instead of just adding raw chicken to cook...

Does anyone marinade chicken before adding to sauces and if so in what?

Hi,
I  thought I's pass this on.
If you have a TKMAX store in your area they have Zwilling J.A.Henckles knives at massive reduction...not sure if any seconds..but have Henckles funky red men.. marked down from 60/80 quid each to 16/12/9 quid..and paring knife 5.99.....I bought one to test and like a razor.went back and bought around 6 diff knives.Really delighted with them and better than the couple of Globals I have.

maybe not for u but I can definately recommend.

Hi,

Are there any good recipes/ideas on what to serve for pudding.....I know ice cream obvious..i mix some creme de menthe in good ice cream served with mints after a hot curry.
Would be interested to hear of some dessert ideas and recipes.

Hi and festive cheer to you all..

I have a great recipe for a chicken kurma and perfect sauce..I sometimes feel the chicken is dipped in the sauce tho rather than having its own bite.

Anyone have any tips if they marinade the chicken before cooking in sauce and if so any tips of what to marinade with..

I've tried a few times to replicate the wonderful red chicken pakora and chilli sauce from my BIR..not even close yet..

any helpers on recipe and methods on how BIR's do this?

Lets Talk Curry / Food Colouring

Hi,

I would welcome advice on when it's appropriate to use food coloring in a curry and the the timing of when it should be applied.

My local BIR has a fantastic Patia and rich red colour.

General advice on the use of food colouring would be appreciated.
