Curry Base Chat / Cabbage in a Curry Base?
« on: February 19, 2010, 09:06 AM »
while i was at my local takeaway last night picking up some chapatis i was having a bit of banter with the guy on the counter regarding making my own curry gravy the chef was behind him rolling fresh chapatis for a bit of a laugh i announced that i had my own restaurant style secret gravy the chefs ears pricked up and he started to enquire what was in my so called secret sauce!
anyway during this conversation he asked me if i used cabbage or onion in my sauce cabbage i thought never heard of that one!
i tried getting some more info out of him but he went a bit quiet and carried on his work when i enquired what he put in his sauce he replied "many spices"
he was very old Pakistani and his English wasn't the best.
just thought id put this out there for debate?
so the question is has anybody heard or tried using cabbage in their base sauce.

Just Joined? Introduce Yourself / Hi all
« on: August 20, 2009, 02:11 PM »
been cooking curry for years and have always been disappointed with the results my curries have never tasted anything like the ones I've enjoyed in my local restaurants(i live in bradford so no shortage of restaurants here or good quality ingredients)
last year a friend i met on a middle eastern cooking course recommended the curry secret by kris dillon my curries were instantly transformed although this was a vast improvement on my earlier efforts Ive now become a bit bored of the taste and increasingly disappointed so decided to have a nosey about and came across this site
going to start with darthpall recipe and see how it goes from there.
ps i am not or ever have been a member of any forum so please pardon my inexperiance its my love of a good curry that has inspired me to join and post
thanks
