I am a firm believer that the base ahs to be cooked for as long as it tastes for the natural sweetness to develop. This normally takes at least 1-2 hours for me.

I have one that i got off my south african students mother. It uses mrs balls chutney. Will post it up tomorrow.

Dont know if it is authentic but i am lead to believe every household has their own recipe for it!

Has anyone had a chance to try any recipes from this book yet?  It gets a lot of good reviews on amazon, although I do not always think that counts for much!

A tbsp added to a jalfrezi also gives a nice twist to it.

I regularly freeze, defrost, cook, refreeze in curry, reheat my chicken.  not sure how safe it is but never had a problem.....yet :)

When making a base, i have always browned my onions well.  it gives the base a lovely sweetness!  i know it is not b.i.r but i think it improves the curries.  I Recently done a side by side comparison with jb's base and again preferred the browned onion version.
