Traditional Indian Recipes / Re: Prawn Curry - cooking time
« on: June 18, 2005, 03:47 PM »
I have to say, i dont count!  Not long though.  The onions benefit from a slow swaeting to develop flavour but mustnt get burnt, the prawns, just long enough to cook them through - no more (a few minutes only)

Use your cooks judgement!

Traditional Indian Recipes / Prawn Curry

I have been taught a very simple, but very tasty prawn curry by an Indian friend.? Take some large prawns, a chopped onion, garlic if you like (she doesnt!) some fresh tomatoes, skinned and a couple of red chillis.

Sweat the onion in some oil (with chopped garlic if you like) and add chopped skinned tomatoes and chopped, seeded chillis, cook down with some turmeric (a heaped teaspoon).

Finally add the prawns and cook gently until just cooked (too long and they get tough).? Add salt to taste.? Serve!

She cooks me a small dish of prawns, some cauliflower florets, lightly curried and a small dish of lentil dahl, served with a couple of chapatis.? Mouth watering!

She says, with prawns, they have such a delicate flavour you dont want to mask it with lots of spices.
