Hi Currylover,

We have had this problem before at Curry 2 Go, one of the lads I had working for me (pot washer) put bleach in the
water. I found (as has already been suggested ) that if you scrub the pan with very hot soapy water and apply a bit of elbow grease it will come right-  all nice an shiny again.

 :) Hi,  just to clarify- this 'Shortcut' method is something that will appeal to a few who don't want the faff of making a base at 11pm at night if the are out of it- it is a compromise but quite honestly guys try it as I surprised myself with how good the results were.  Obviously I promote making base gravy everytime to get the exact taste people are looking for in recreating BIR and obviously myself and our other chef's at Curry 2 Go make base gravy every day- but you wouldn't believe how many people ask me 'is there a short cut?'  hence I made that video.

One little extra tip to try;  When you add the onion paste(base) fry it pretty dry as this has the effect of sweetening the sauce slightly which is mimicking what happens with a a real base- you need to do this (I show it in the video) and then you will be surprised how close a result you get!

I would be interested to hear what you think once you have tried it!

My favourite recipe is Vindaloo.

The way I cook at home is generally not BIR style, however,  if I take a curry home from work- it's invariably a Vindaloo!  When you are cooking BIR style curries day in day out they tend to loose their appeal (might be just my curries!) when I eat out I tend to go for vegetarian Indian or Pakistani style.

I didn't know it was possible to remove comments on youtube but perhaps Julian is trying to calm things down, which must be good. As I said, I simply don't know if his cooking or recipes are anything special but, even if they are only 'average' he's probably provided more information in a few months than Pat Chapman and Kris Dhillon did over several decades. I simply can't understand why anyone here should seek to criticise him for not contributing 'even more' to this forum. He doesn't owe us anything. Even if Julian had simply popped in to let us know about the videos and eBook, I'd have thought it was in our interest. As it is, the rude comments are likely to put him off, plus any other budding authors. To say he's 'two faced' or anything similar is so rude and out of order, in my opinion.

The video which kicked off this thread is potentially up there with the best, so why is Julian being criticised rather than praised?

Just to set the record straight here;

YES I did agree with another forum member about how critical some on this forum are and YES I did say (for that very reason I don't bother with the forums anymore) my reason??

I have been accussed by a member of this forum of "stealing recipes..." which I then added to my book, which is complete and utter NONSENSE!!

I have also been accussed of "operating a money making scam..." by a few so called "Curry Gods" on this forum .

THIS is why I don't bother anymore with this forum. It is one thing to criticise a person's recipes (no harm in that in fact isn't that what forums are all about?)  but it is another thing altogether to accuse some one of "stealing " and "operating a money making scam" on a public forum- both of which stray into the realm of libel!  Anything that damages a persons reputation and good name is NO laughing matter and quite honestly has annoyed me!

Curry is not just a hobby to me - but how I make my living and because of certain people on this forum making nasty remarks, this could affect my business, particularly when they are not content to confine their 'rants' to this forum but they also start posting nasty comments on my Youtube channel!   Thank God there are more positive decent people out there than nasty ones on this forum or we would all be knackered.

While I am at it, I did not use this forum or the other one " Just to promote my Ebook.."  firstly I was invited to come onto this forum by someone who had seen my videos on Youtube and thought it might benefit others if I got involved- which I happily did. I also posted recipes, tips, and revealed ingredients to my Base Gravy NOT covered in the first Base Gravy Youtube video. (secrets I was saving for my book!)  I was also happy for all my videos to be posted on this forum. I answered TONS of emails and questions from forum members (I still do!!)  and all of that before I even mentioned my Ebook,  so some people on this forum need to get their facts straight before saying I contributed nothing!

I am not stupid I know how things work, some people feel threatened when someone knew comes along and suddenly takes the limelight for a moment, so because they don't like to share, they have to create lies and stories to not only rubbish what the guy does, but turn everyone against him. Does anybody know what I am talking about?

What a flipping shame! Because this forum could get better and better and end up having more knowledge about the food we all love (BIR) than many 'Indian' restaurants but as many have been put off by the "Bullying" that goes on here!

I have had a LOT of forum members email me about how they don't post here anymore because they see what goes on and they don't like it.


Some may not like what I have had to say tonight, but I felt I had to set the record straight.

Just picked up on the thread about the debate over the seasoned oil.

Firstly,  I would just say, there are no rules, and as I mention in my Ebook, "there is no one school of thought or authority on BIR cooking- that's what makes the chase for the taste interesting!

What I will tell you guys is this; of the many different Bengali Chef's that I have had the benefit of knowing and who's kitchens I have spent time in, all of them without exception recycled the oil 
  2 of them I know didn't add it to the Gravy but they used it all the the curries. The others I know all use recycled oil in the base. The Pakistani kitchens I have been in don't use it (but I have only been in 3 Pakistani chef's kitchens.

If you are still in doubt about this check out a Bengali chef on Youtube called Dipurajah  (I know him and have been in his kitchen) watch his videos and note the colour of the oil going into his pan at the frying stage and you will without doubt notice the oil is seasoned. The are a couple of reasons this happens in Takeaway's,  1 is economics, the other is simply a matter of adding another subtle layer of flavour.

Having said all that if someone finds that it really doesn't make all that much difference and they don't like the thought of used oil, then that's fine as I said there are no rules.

Lets Talk Curry / Re: Curry2GO Ebook Video Links NOT WORKING HELP!

I bought Jullians Ebook couple of days ago which loads onto my computer but when I click on the video links they don't work. I've tried 3 different browsers, copying and pasting them and typing manually and still it says page not found. I've searched on google about the problem and tried some solution but it still won't work.

I sent Jullian an email as he told me to in a different message but haven't had a reply.

Anyone else had this problem.

Sorry if I missed your email have been inundated with email these past few days.

If you computer does not take you to the Youtube site, it is almost certainly a 'pop up' blocker on your computer.
I recommend downloading the latest version of Adobe reader this will cure the problem. One other thing to check is your firewall, make sure it is allowing you to view external links.  Out of the many copies I have sold, only had one other who had your problem and it was his 'pop up' blocker.

I've just finished a session in the kitchen and have a bloody hot Zaal phall ( i obviously cooked the chilli properly ;D) with pilau rice to be eaten.  The last two days the forum has been quiet which i think is due to many members reading, digesting  and mulling over what is in Julian's book, myself included. 
If only a book like Julians had been available 20 or so years ago along with the instructional videos when many of us had begun our quest   ???.  For anybody just starting out on the journey this book is invaluable and they have it easy compared to many of us.  For many of us die hards the book has a few gems and reinforces much of what we suspected as well as that which we now take as given.
I have to take my hat off to this man.  To do what he is doing, not just running Curry2go but producing quality instructional videos for keen BIR enthusiasts to learn from and to produce an e-book  just shows his passion for BIR food and a considerable amount of balls.  I did knock your naan breads and question the simplicity of your bhuna but, for what it's worth, you've certainly earned my respect.  You had a dream and you've made it come true.   I hope that C2go continues to thrive and flourish, there are more vids to follow and look forward to another volume or two on your take of BIR cooking (BIR sides and starters would be excellent  ;) ).  After the effort you've put in to this, you really do deserve it mate.  Your contribution on this site is very much appreciated by many.
I'm trying to resist the temptation to launch into a curry2go frenzy as i still have much to work on with the Zaal experience but i will get round to trying much of the contents.  One of the main learnings for me of 2012 so far is exactly as Ray said.  One, if not the main secret  centers around technique and the ability to consistantly produce the same results time after time.

While I appreciate your positive comments,  I am well aware that though I have done my best to make things as clear and concise as poss, inevitably some things may need some elaboration and clarification, so I just wanted to add this post to say;  I am happy to use this forum the discuss the recipes , techniques or just any questions that anyone might have. There have already come to light one or two oversights; like the cumin seeds missing from the Pillau Rice recipe (Dohh!) but you'll notice they are there on the accompanying video (don't know how that happened as the book was proof read numerous times?) 

Also has some of you may have notice I mucked up the editing on the Base Gravy video part 2 hence a little bit of the video got lopped off ( I was over my 16 minute Youtube allowance)  hence I quickly made a follow up video to compensate you can watch it here: http://www.youtube.com/watch?v=6WjkCvKjDk4

So feel free to ask any questions or let me know what your thoughts are it may take a few days to answer the query due the time involved in running Curry 2 Go caring for three kids and embarking on a follow up book,  time may escape me.

Some things to look out for...

I am still planning more YouTube videos with recipes and tips etc,  so as I find the time I will upload those.
I have also just started working with a 'seasoned' Pakistani Chef who will be working along with us occasionally at Curry 2 Go and revealing some who his recipes for Pakistani dishes. I also hope to work with another 2 Pakistani Restaurants, so hopefully extract a wealth of knowledge from these!

I do really believe that the best South Asian cuisine is right here in the UK!  If anyone has ever been to an 'Indian' restaurant in the USA you will know what I'm talking about!  The UK has become a melting pot for so many culinary influences and fusions, unlike anywhere else in the world!

Having entered this Industry in the past couple of years it now seems that things are really beggining to open up;  what I mean by that is more and more south Asian chef's are happy to reveal their closely guarded secrets and work with non Asian chef's and organisations (maybe because of the curry crisis?) For example Mumtaz in Bradford are working along with Bradford college (you might of seem my video on that?) and other restaurant are cooperating too.  My aim is to plug into that and obviously share that knowledge with other like minded curry fanatics.

That's great, I'm not over there until the 1st week in June (Mon 4th June to be precise) really looking forward to meeting you.

Just had a new tivo box installed with access to youtube on it.  Me and my mate spent most of Saturday night watching the videos from c2g.  I was amazed and he, even more so.  He'll be coming along with me if you don't mind.  He's a blue like yourself only he's not so 'vocal' as he was earlier in the season ;D
