I've been lazy recently and although having a tandoor and a gas burner
And being impatient   ::) while my naan was heating in my pan on my hob I whipped out my blowtorch and bubbled up the top of the naan
I was impressed anyway  ;)

Another thing I forgot to mention He did say you might not get the same taste as the restaurant because it's all weighed in kilos
For his base he uses 30 kilos of chopped onions to three cans of 2.5 kilo cans of tomatoes

He doesn't do recipes all in his head
It was the same ingredients has happy naans apart from no baking powder and all milk no water
He put everything in a bowl and added milk to the right constantly
I liked the way he made them smaller when made the size of a side plate which made them go around further
taste wise no difference

He is a nice fellow aswell
And always available when not at the restaurant
But obviously august is best time when he has a free month

Also all chicken in the restaurant for the curries are not precooked and
Cooked from fresh
I would say his style of cooking would be good for bulk recipes
The bases where not diluted and were not reduced like bir
