Lets Talk Curry / Re: Are these two the same?
« on: August 17, 2016, 10:42 AM »
just one interesting point.  I know many people scoff at Pataks products as not being real Indian, but during the many times I have been to india, I have seen pataks in shops and on billboards all over india.  I still think their cooking sauces are vile and not the best but I do use takka, balti and tandoori pastes when doing BIR although other products are good also.

Pataks pastes are quite a bit more expensive, is it worth the extra for pataks rather than the cheaper brands?

has anyone tried the Chicken Tamarina video which I think was one of Julians?  I've tried it a few times and its excellent.  I generally use the Maggi brand of tamarind sauce, but I guess they are all very similar

Has anyone seen the YouTube videos of Sunamganj?  I have seen more than half a dozen from this person and they are of the same BIR establishment and there are some great videos.  Here is a selection.

Actually having been to India many times, pataks products are very popular in indian supermarkets, including the pastes and cooking sauces.....why I hear you ask?.  You will see advertisements everywhere for pataks.

Lets Talk Curry / New cash & carry in Norwich
« on: March 15, 2016, 11:08 PM »

There is a new Asian cash & carry just recently opened up in Norwich called Desh in Anglia square. Great place selling all the usual products. The only place in east Anglia that I know of that sells Ali pans and stockpots and all manner of essential BIR cookware. One thing that particularly excited me was that they are selling boneless mutton and at only

Talk About Anything Other Than Curry / Re: What
« on: March 12, 2016, 02:06 PM »
I've recently made Ceylon and is one of my new favourites.  I prefer it madras strength.  I tend it gravitate to my favourites of vindaloo and phal so am trying to vary it a bit more.

Cooking Methods / Birmingham Balti Pan
« on: March 01, 2016, 12:11 AM »
I recently bought a couple of Birminham balti pans, made out of pressed steel.  I mainly use Ali pans but these pressed steel pans gave a far better flavour to the curries.  I think I've made a major discovery here.  The curries from steel are consistently better than those made in Ali pans.

Anyone else find this to be true?
