Curry Base Chat / Base
« on: May 27, 2016, 11:54 PM »
If a base is advised to be of milk like consistency, which most of the time it is, does it really matter who's base or what base is used to get good result's.
I would think the final result would come from the amount of oil, spices, etc when cooking final dish
Surely if base is watered down so much then i don't see the importance of it?

Did you buy Butter Ghee (Animal) or Veg Ghee?
cheers Chewy
I bought butter ghee Chewytikka, is this your preferred type?
It's been in the fridge now about 8 hours and doesn't look difficult at all to scoop out like some of the earlier posts are saying.

I think it makes sense to now refrigerate, as i will only be using very minuscule amount's a couple of time's a week.
I just used a full teaspoon in a phall added half way through cooking and found the taste of ghee a little over powering, so i will half that amount.
Thanks chaps

Nice try ruby.

This is the seasoned oil, it is added as a seasoning near the end of cooking your curry. (its never seen an onion bhaji, chip or fat fryer

Looks very dirty at the bottom of that oil, all bits n crap, is it from that Chinese salt n pepper chicken video you done Chris?

Whilst i appreciate the video and effort that this curried away guy has made,i've been looking for a phall vid for ages, so was well happy, but i thought his attitude at the beginning of the video stinks!
Correct me if i'm wrong but.. 'this is my version of a phall, if you don't like it....' hmmm
Could he of not just said, 'this is my version of a phall'

I may try this in a Traditional Curry with plenty of water

cheers Chewy
I have some of this unopened bassar masalla, so you would not use base gravy with it then?

Cheers Frank. Will give them a bash soon! I've never used yoghurt in bhaji's but seems to be a good addition with all the other ingredients. Like mine quite spicy so will go with the usual chopped green chillies and chillie powder! They certainly look a decent bhaji, look forward to trying this with mango chutney  ;D

Could be worse Stephen, she could of said 'stinkers'  :)
Will try that method Frank. Do you add salt whilst you leave them, as i know that gets the juices flowing, or leave the salt until just before frying stage.
Thanks

Correct Stephen. I can't seem to get it right without the water added, small amount, but does the trick, i find they just fall apart once they hit the oil, which btw is hot enough. The guy in this video doesn't even wet his hands for the batter.
He could have wet his hands but i don't see this.
