Lets Talk Curry / Some questions about CA's recipes (and some pics)
« on: February 21, 2014, 10:20 AM »
Howdy,

Ive got a couple of pics of my base sauce from yesterday. It's CA's sauce using his spice mix.

I've also got a couple of questions about his madras

Do i need to use his spiced oil or not?

If im making the madras for 6 people this weekend, should i do it in one pot at the same time, or is it better to follow the recipe and do it in 3 smaller batches?

Pre-blending base sauce....

Base sauce after blending....

All tubbed up - 5 300ml portions for freezing and one ice cream tub with 900ml in it for this weekend.

Thanks, we have a B+M just down the road in Wisbech so i might have to pop over there at some point.

Made my first spice mix tonight, and my base is currently simmering away. (CAs)

Looking good there CT. Looks like i might end up demanding more cupboard space :D. The spice shed particularly has peaked my interest as im about to build a summer house/pool room/man shed and might have to add "spice shed" onto it's list of purposes.

Cheers, looks like i'll have to make a ton of curries then in order to get through all of these ground spices before they go bad  ;)

Lets Talk Curry / Storing Spices

Hi all,

I'm new here and have just bought a shed load of spices online as I am planning to make my first BIR curry this weekend using one of the great recipes on here. (CA's madras)

I was wondering what you guys use to store your spices. I'm thinking just normal jam jars will suffice but wondered if anyone used anything specific and for any reason. I quite like the terrine jars - does anyone know of the cheapest place to get them?

Ta muchly

Mark

Hi all,

First post on this forum after reading for a while and not having the time to actually cook a curry using one of the bases on here. Just finished fitting my new kitchen, so it's my first attempt this weekend. Im going to use this base and cook CAs madras for 6 people.

Wish me luck!!

Mark
