its all bout technique , i just made the most amazing bir curry with same flavour as my local , used ca's base minus spiced oil , not required , its all about scraping back and knowing whn to add the other stuff , technique is key , i will post a full instructon tomorrow - v impressed with my madras lol

Hi everyone , just a quick post to find out what everyones favourite dish is on the forum at the moment and why ? also where would you rate it on a scale from 1 - 10 ( 1 being poor and 10 being fantastic )

Curry Base Chat / Best Base so Far ???

alright members what base do you think is the best to date and what curries would you use them for ???

1 teaspoon of red chilli powder
quarter teaspoon of bicarbonate soda
half teaspoon of salt
tablespoon of cumin seeds
teaspoon of tumeric
2 cups of gram flour - sifted through a sieve

mix all the above ingredients and add a little water until you get a batter like consistency

now add farm foods frozen chicken tikka pieces and place in hot oil at 170 . take off after 5 mins . let rest for 1 min then back into the oil for 1 min at 190 .

this is really amazing - i tried it last night !

Hi there i bought a stoning plate for an oven , my oven only goes to 250 hot , u think it will work? , anyone got the best recipes for garlic nanbread ?
