The Chef knocked up Staff Curry for the two of us in 30minutes
Chicken Shatkora (Bengali Favourite) with steamed Basmati Rice.
Spot on.

Clay Oven Pizzatime

Craving Italian flavours, decided fresh Pizza was on the cards.

Bit local ASDA shopping, good start as I got a handful of free fresh yeast
from the baking counter.
Pimped up Passata, Mozz/Chedder mix, Fresh Mozzarella ball,Italian Sausage/Salami
Antipasti Sun Dried Tomatoes and fresh Basil.

Result, a smoked 9 inch thin crust, piquant pizza for tea. yum  :P

Working on a Fish dish last night, choice Cod fillet
pan fried in Lurpak, garlic and curry leaves.
Served on a Malabar curry sauce with Basmati rice.

Tandoori and Tikka / Chewy

After a great summer Tandooring on charcoal, decided to switch back to gas fired

Cleaned the oven up, did a bit patching with new clay and fired it up for a slow pre heat, about 45mins,
which is to cure the new clay. all done,

Now to cook some Chicken.




A few ingredients (15) for the Tandoori Marinade

Cooking on Gas

After a great summer Tandooring on charcoal
switched back to gas fired for the winter season.

Tested it with Tandoori Chicken, nice clean and efficient.

A regular restaurant staff curry, scaled down for two.
Very fresh tasting curry for about a 1.00 GBP per head. :P

Cooked in around 30minutes from scratch.
Served on a bed of Pilau Biryani

How I cook BIR Chicken Chatt. (Starter)
An update to my 2012 video recipe



Basically Do a mini Bhuna

Heat 1.5 tbs veg oil
Sweat down a handful of Service Onions
with a pinch of salt and kasoori Methi - 2mins

A touch of G&G, cook out - 30secs

A touch of the usual,
1Tbs Tomato Puree dilute,
0.5 tsp Mixed powder,
0.5 tsp Kashmiri Chilli Powder
and 1level tsp of Chatt Masala. cook out - 30secs
with a splash of base gravy.

Add a handful small diced precooked Chicken pieces
combine and saute hard, keep adding splashs of base gravy - 1.30mins

Add a handful small diced Tomato and coriander, combine and saute ,
keep adding splashs of base gravy, singe-fry and deglaze - 2.00mins or until it all becomes semi/dry.

Serve on a Puri, garnish with cucumber, coriander and lemon.
