Chana Murgh - aka Chicken and Chickpeas

Really fresh and tasty, authentic Bangladeshi BIR dish
Cooked at home bhuna style - Simple Supper - Yum! ;)



Bagar service onions and green chilli + capsicum



Add Chana a little base gravy and Bhun/Saute



Add Chicken a little base gravy, chopped coriander and Bhun/Saute



Add more base gravy, at least 200ml and combine



Leave to reduce 2 minutes



Add a couple of wedges of tomato and a pinch of Garam Masala to finish



After another minute cooking, the dish is ready to serve



Add a Coriander garnish.

Chilli CTM

Had to make a batch of Chicken Tikka Masalas for folks
Although very popular and I do have a sweet tooth, I only manage a couple of mouthfuls
Tasty but too mild, its just not spicy enough.

So I prepared this one as normal, but with fresh green chillis and and instead of red chilli powder
for heat, I added a hot green chilli sauce and fresh green chillis.
Unusual but tasty, hot, nutty, sweet and creamy flavours

Nice natural BIR colours. ;)

Nice little number for supper.

Fusion curry, a Pathia and Vindaloo combo
Extra Hot, spicy, sweet and tangy sour sauce with Tikka Chicken
Served on a Mushroom Pilau.

Bit of a Tikka cook off today!

Wet and windy miserable Friday, but its Friday, so its curry night!

Bought 3kg of fresh chicken tenders and decided to
cook it off in the Tandor, ideal for starters and curries.

Malai Tikka is one of my favourite BIR starters and is a complete contrast to classic Tikka
the light dairy marinade produces a soft succulent texture to the Tikka
which is mildly spiced and melt in the mouth delicious.

Great In curries like Saag or Methi Malai Murgh or a creamy Pasanda, Korma or Nawabi

Plenty for curries. These chicken tenders are from large birds, so three per curry will be a good portion. Yum :P


Cannot beat this straight out of the oven. Delicious  ;)

Traditional Indian spices and flavours
all cooked with animal butter ghee

_ Gosht Pilau Biryani (curry cut bone in Sheep)
_ Murgh Tarkari (succulent bone in Chicken)
_ Toor Tarka Dhal (Loaded with coriander and garlic)



The change in season, calls for some serious curry action in my kitchen.  ;) ;D ;D

Garlic Chilli Chicken Aloo

All fresh ingredients cooked from scratch, including 6 litres of Garabi
Really nice Charlotte Potatoes at the moment, hold together completely
in the curry and retain their flavour.
Plenty of sauce with extra fresh coriander.

Doing a Balti version tonight. with extras maybe.
