Chewy's Triple Madras



Last night I was round at Chewy Tikka's house for one of our curry fest's with him usually doing most of the cooking cos he's miles better than me. Anyway I took round a Mutton Masala I had made with a Nellara Mutton mix which my local indian shop had recommended and I hadn't seen before. I wasn't to taken with the resulting curry but the on the bone mutton was very nice. We then did (well Chewy did) 3 different Madras's with slight differences in the ingredients like the type of chilli powder, lemon and worcester sauce missing in one, different base in one of them and different tomato in one, few chopped chillis in one etc etc. The chilli powders were normal, ground dried birds eye and Kashmiri. So with 3 slightly different madras to try I have to say it was a photo finish with the ground birds eye one probably just edging it for me. Not a massive amount of difference between them and all very good. Obviously the lemon dressing and worcester sauce came through in the two that had them but I would have been happy with anyone of them served in a restaurant/TA.  Left over madras sauce tubbed and mixed together tonight on chips which was fantastic hence the Triple Madras. We also had vindaloo and a pathia with a couple of naans. Fantastic night.

Well its been a great week. Spent Tuesday with a good friend and had a good days curry fest. Spent this morning doing 2 batches of base in the soupmaker finally getting the call that the missus would at at her friends for the evening. Lets Talk Curry / Gav's Last Supper

As a couple of you know, I finally retired yesterday and I can now spend the rest of my days either sailing or cooking curries.
For my last night at work I made Chicken Tikka, lamb Tikka, Mint Sauce, Naans, Onion salad, Onion Bahji's, Seekh Kebabs , poppadoms and bought in the Lime Pickle. Made a massive onion pilau rice and 10 CTM, 4 Chicken Pathia's, 2 CT Balti's - madras hot, 1 Ct Balti, 1 Chicken Curry, 1 Lamb Korma, 1 Lamb Rogan Josh, 1 Lamb Dopiaza and 2 Lamb Madras's and also a red lentil and butternut squash dahl. Great night apart from the fact of all the emotion of my last night and the  stress of preparing it, I didn't get 1 photo for which I'm gutted. I pre-made the sauces into foil cartons and added the meat on the night and warmed through in the oven. All turned out well (even though I had a couple of near misses) and happy punters all round.

So I'd like to thank all those on this site (especially Chewy) who have in someway helped me to attain what I did the other night. Great site and great recipes, tips, advice etc and if it hadn't been for here and the people on it I wouldn't be cooking curries the way I do now.

Really Bad British Indian Restaurants / Akbars - Newcastle

After managing to deflect the issue many times, I finally caved in and went here last night with my family. Quite simply it was the worst curry I've had for many a year. On arrival (booked) we were handed this device which beeps when you table is ready and left to our own devices. The place is big , flash and was packed. After finding a settee to sit on after about 15mins, the thing beeped and we made our way to reception to be shown to our table, read menu and then ordered. Some poppadoms first with a pretty poor pickle tray. Some insipid watery mango sauce similar in looks to the big squeezy bottle I had been looking at in the indian suppliers I use for
