Thanks DP. Love making bhaji's, will give these a go from the first video. I've only just perfected the besan and water ratio after so many times of trying, used to fall apart in wok because never used enough besan. The addition of spinach i like also.

Freeze a few batches, when i need it, i just bang portion in a wok,tablespoon of seasoned oil with few sliced chestnut mushrooms and bit spinach at end of cooking. Easy.

Never used this rice before but it's aged and seems to have decent reviews.

Glad you bumped this up Rubydoo, because it was a question i would like to know. Even though googled it, i think best awnser would come from this thread..
I have a 3.5 litre capacity fryer which i haven't used for the bhaji's, as i thought that a lot of that oil would go to waste / go off, using the remainder as seasoned oil, i tend to stick 1 litre in a wok, fridge it then i know i get the full use of the seasoned oil.
But if you can freeze it, scoop some out, all the better... waste not, want not, innit  :)

Is there a base gravy recipe in his book, seen a video of his making a curry and the base looked really thick, not soup like consistency as most recommend.

Cheer's Phil. I used to get to Kent quite a bit as a trucker, but been laid off a while. I think that's where my love of coffee came from when i was on the road, never drank it beforehand.

Sister said she will pick some up, when she's home next week from St Andrews and we will both try it.
This could be the parting of me and Douwe Egbert's soon because with a name like that it's got to be good.
