Lets Talk Curry / Re: Which chilis and where do you buy them?
« on: December 07, 2013, 07:57 PM »
Where are you located?

I'm in Finland. The local offering is a bit hit and miss (mostly miss), so I rely mostly on bulk purchases from abroad, which I freeze. Seems to work ok, but I'm looking for some chilis with some real flavour  :)

Lets Talk Curry / Which chilis and where do you buy them?

I'm really interested to know which types of chilis you guys use. Are they just the usual green finger chilis, bird's eye, or something special?

Also, can anyone recommend a good mail order source in the UK (one that delivers to Europe).

BIR Main Dishes Chat / Re: Chicken Pasanda from base sauce?

I used this one:  http://www.cook4one.co.uk/c2/sb/c46baltipassanda.html

Came out very well and nice to have something milder for a change. It tasted better than the pic  :)

Thanks all for the suggestions!

Thanks Fried, but I might struggle without a tardis :)

I put all this into a freezer bag, mix well together, seal the bag and pop in the fridge for 2 days.

Thanks Stephen, I'll try and tweak a Korma - good idea  :)

Good week to you all.

BIR Main Dishes Chat / Chicken Pasanda from base sauce?

I'm looking for a Pasanda recipe for Monday evening. I?ve found a couple on the forum, but no real comments on how they turned out. Does anyone have a "tried and tested" Pasanda recipe that they could recommend? A creamy almondy portion of Pasanda to impress the wife  ;D

Lets Talk Curry / Re: Bringing jars to life

I'll have to give that a spin Rob   :)

Usually if I'm out of base, I use KD's recipe for yoghurt curry. It's not bad. But then a few months ago i bought this 6-pack of Sharwoods jars from Amazon, and last night was the first time I needed one. Still 5 to get through....

Going to try find this Mr Naga pickle  ;D

These days, if I need a fix and haven't what I need to hand, i'll order a take away.

You're lucky to have that option   :)

The nearest Indian is about 30Km away, and they don't deliver. The next one is nearly 200Km away  :(

The nature is of course beautiful, but man needs curry sometimes at short notice. Hence the jars  :)

I'm hoping you other curry-heads also have this same experience some time. You really really want a ruby, but all you have in the cupboard is a jar of curry sauce.

What have you done to bring a curry jar to life?   :D

This evening, all I have is a jar of Sharwoods's tikka massala. I'll add half a diced red onion, four garlic cloves and a little green chili to begin with, then add the chicken for 5 mins and then the sauce, and stir in some chopped koriander to finish just before serving. It works ok, and tastes a whole lot better than the sauce would without the additions!

But what are you experiences?

Rogan Josh / Re: Chicken Rogan Josh

Just tried this recipe.  :)

Came out really tasty, although I increased the simmering time at the end to about 5 minutes (before adding the koriander and joghurt). The colour wasn't as red as in your photo, but maybe that's to do with your flash.

Anyway, thanks for the recipe!
