One thing I would LOVE to eat is Curry Sauce and Chips from my local Chippy (with a little bit of red cabbage too :D). The question I have and would LOVE!!!!! to know, is how do they generally make that curry sauce (splash) that goes on the chips. From my memory it was always cooking in a big silver pot and always seemed pretty simple, but very tastey! And they would just take off the lid and take out a scoop and pour in on your Chips. I have bought the Bistro 'Chip Shop Curry Sauce' but it was AWFUL! and definatly not what the Chippies use.

If anyone knows or could find out for me, I shall be eternally grateful!! ;D

British Indian Restaurant Recipe Requests / Re: Chilli Sauce?

Well, I have found out that some places buy it in Bulks from a Cash and Carry, I would LOVE to know what the brand name is of it though!. Different taste from what you would buy Chilli Sauce at your local ASda. Some places make their own, living in America now theres no way I can go into a Kebab Shop and ask (well find one untill they tell me).

Best base is Kris Dhillion. Just use that. Don't waste your time experiementing with loads of types of base. USe the KD one, and concentrate on cooking curries with that. You can get perfect BIR dishes from it.

OK, Do you have the Link to the Kris Dhillion one??

Midge, when you get to this part of the recipe.....
Add( base mix here ), tin tomatoes, ketchup, puree & chillies bring to boil then turn down cook for approximately 10 minutes ( medium).
Allow to cool then puree all ingredients add Star Anise cook medium 10 minutes.?
Chop finely some coriander & stir into curry gravy.
leave till next day.you will notice how sweet it has become & smells really nice ( can ya smell it ??)
I COOK ALL MY CHICKEN THE SAME WAY? .3 breasts diced.put in pan, boil kettle put into pan with chicken & half teaspoon Turmeric & cook until cooked right through.
I believe my success is due to my recipe`s being simple in spice content (if you had a take-away what would you do ?)
I hope this is of use to you all. ALL THE BEST DARTHPHALL.
sorry if a bit vague but this was one of my first posts & its been unread for a long time.
