Thanks CK - I like the idea of asafoetida in the pakoras. Never tried that before - it might add that elusive taste I'm after.

That's disappointing news. I might try the KD base with the Kushi final spice mix tonight. That's about the only thing in this book that looks half decent.

I'm making Chicken Tikka and was going to use the Kushi method but have you seen the quantity of powdered spices that goes into the marinade. I can guarantee this recipe would be rank.

Chas posted a good recipe for Tikka recently, but I'll try the "Balti Kitchen Video" version tonight for a change.

I must admit, I'm underwhelmed at the recipes in this book. Gut instinct tells me there isn't anyting new. However, I'll reserve final judgment until I try it out - probably worth the money even if it doesn't produce the taste.

This Chicken Tikka was spot on Chas - haven't tried the gravy, but the chicken is superb. This will be my new method from now on.

Chicken Tikka Masala

Ingredients:-
? Onion, chopped coarsely
3 Tbsp tomato puree
1 Tsp spoon cumin seeds
1 Inch piece ginger root, chopped
3 Tbsp lemon juice
2 Garlic cloves crushed
2 Tsp chilli powder
1 ? Ib of boneless chicken
Salt & Pepper
Fresh mint sprigs to garnish

I like the sound of this to make Tikka so I've made up a batch which is marinating now. I found the texture to be quite thick so I added 2 tbl oil and a little more lemon juice. I also added a tsp of mint sauce rather than using it as a garnish.

It smells excellent - hope it turns out OK.
