Actually it's a little more complicated than that KP. They shouldn't let anyone other than the chefs into the kitchen on Health and Hygiene rules. Also their insurance wouldn't cover any mishaps to the punter, should they occur.

Andy that's really interesting. Are you saying that all dishes are cooked individually? Even if there's an order for, say, three madrases, you cook all three individually? That's quite a clue :)

Well you live and learn, eh?

It's funny though, I must have by chance, in my travels, picked the restaurants that make CTM without lemon juice or chilli, because they've always been fairly uniform in flavour. I dunno.
