Hook things from IKEA and just your bog standard skewers, plus i place a roasting tin at the bottom of the oven with water in to catch the drips.
top of oven at 170, using a fan oven.

I would post pics but i haven't been able to post for some time now says file not supported which is a jpeg file so don't know, using the CR0 image hosting.

Without knowing how many orders you will get and what dishes sell best for you where you are based it can be difficult to say because fresh is always best, i pre-cook chicken the night before, base night before and keep it covered, potatoes about 2 days at most in fridge.
For me i sell a huge amount of Chicken Tikka Masala, then Bhuna, Madras, Dopiaza, Rogan, Korma with Specials, this depends on which specials i make, Garlic specials sell well also for me.
So after a certain amount of weeks/months you can then predict roughly how many curry orders you receive and how much base/chicken/potatoes etc you will need, then saving you money and waste, so more on profit.
Will you be making rice, starters, and sides also.

When i cook this dish i add garlic to a pan with cold oil and then heat them up slowly and cook until golden brown then continue with the rest of the recipe.

Hi SS sorry for late reply been working loads of hours, you van use whole garlic cloves but not the large ones smallish to medium sized they do go a little mushy but not unpleasantly mushy and they still get that nutty flavour to them.
Here is an example Garlic Chicken video here https://www.youtube.com/watch?v=p8VpCC7TRZc
I still use this recipe.
