British Indian Restaurant Recipe Requests / Chicken Rogan Josh
« on: September 01, 2006, 09:34 PM »
Does anyone have a recipe for Chicken Rogan Josh? I have made the KD base sauce so if there is one using that great, but if not any ideas?? My Mrs is a Rogan Josh addict so if I can make her one like the local BIR it will help make amend`s for the mess I make in the kitchen when I am making my curries.....cheers........mike ;D

The West Midlands where I live (close to Birmingham) has a large Asian community, all with there own shops selling spices and stuff to all comers. You can get virtually anything for your Indian cooking, and the smell as you walk in the door? oooh la la!! But a lot of non shop owning Asians do shop at "our" local supermarkets for normal stuff so maybe thats why a lot of Asian foodstuffs are now available. It can only be good for all the Chefs on this site....mike

Some Asda and Morrison stores also do a lot of Indian stuff, not only the small pots of spices but the bigger more economical bags. As for coriander I always seem to get there to late and all that`s left is the "living Herb" type in the pot(and it never grows back!) I don`t think you can beat a good rumage around an Asian Supermarket. If you shop in Birmingham the Wing Yip Chinese Supermarket has even bigger bags of spices for all Indian and Chinese cooking........regards........mike..  ;D

I was always led to believe the longer you fried onions the sweeter they got. The thing I always have trouble with is when do onions become golden brown??......mike

Nice one,  ;) How many tomatoes did you add?? How long before the end of cooking?? I had a Chicken Madras from my local BIR at the weekend and I must say the similarity was very close. My wife had a Chicken Rogan Josh which does contain tomatoes. At the moment she is not all that keen on this curry so if I can make it Rogan Josh style then we will have a result.............cheers.. ;D ;D..mike
