i'm going to sit down this evening and pore over the ingredients of the entire range, as previously mentioned i'm looking for the common denominators between all of them.  that'll be my starter for ten on the base.

i've tried tamarind sauce, wasn't too keen, but i'm willing to be converted so i've ordered tamarind paste

Sorry just noticed the question now as I don't get notifications on more than one reply to a topic.

The dough doesn't have to sit for a prescribed time after coming out of the fridge, you can use it straight away it'll just be a bit more pliable if you leave it to sit for a bit.  Don't leave it too long though or as you've seen it gets too hot and difficult to handle, you'll find your own happy medium i'm sure.  Just make sure you keep it covered (clingfilm or plastic bag) to stop the dough drying out and forming a skin in a warm kitchen if you leave it sitting out.

Did a half-portion to test; couldn't find rice flour so used more plain as suggedted, thanks, double-dipped with batter rather than water.  Very nice, bit of a faff but would do again.  I mostly do the southern-fried types of chicken but from limited exposure this is very kfc-alike.  Good find :)

I see tamarind is in the list of ingredients.

yeah, it's in the asda madras but not in their rogan josh, korma or vindaloo.  i haven't looked at the others yet:

Comparing Korma, Madras, Rogan Josh and Vindaloo comes up with the following small list of common ingredients, standard stuff  ::):

  • Water
  • Salt
  • Sugar
  • Garlic Puree
  • Onion
  • Tomatoes
  • Coriander
  • Ginger Puree
  • Tomato Puree
  • Chilli Powder
