All Other Hints N Tips / Re: Don't wash your pans !
« on: August 03, 2017, 06:35 PM »
Reclaimed oil or seasoned will only enhance the flavour but still it won't give you the TA flavour....It cant be achieved at home contrary what people say but that's just my opinion. The same applies when we cook Chinese...Similar techniques are applied in Chinese TAs.. Hopefully this will give you the answer but unfortunately only the answer..

The texture change will once chilled in the fridge...The length of time  I would leave cooked meat once cooled is about an hour and after that into the fridge  I would be a bit worried leaving it at room temperature for any longer especially for the time you stated...In my opinion I would have to say it's not recommended...  Safety is paramount, don't take any chances straight into the chiller and will last 3 to 4 days

Hi Chewy,i've never had an issues with the legs and they can also be shortened. I have mine permantly affixed  to the decking in the corner of my garden out of harms way..Each leg has two small holes at the bottom to insert screws   There's not a lot too the burner itself Three legs and your cooking area..It weighs 12.4 pounds but I've increased this by removing the top brackets and replacing it with a heavy wok ring...This was always my intension before I even bought the burner...My mates a welder and made me one free gratis but this is optional ..There are 142 reviews online I've read them all hence the reason for me having one   Thanks Chewy....

Trainee Chefs / Beginners Questions / Re: Takeaway Kebab Salad

Yeah i'm a bit like yourself Phill   Salad is supposed to be the healthy option but not in the above recipe    When I worked in my local takeaway I was shocked when he started pouring oil into the salad ..  I suppose they use vegetable oil in the same way Italians use olive oil..I hate olive oil in its raw state  and also watching people using it as a dip...Everyone to their own I suppose..If I had to make the kebab salad which I don't it would be minus vegetable oil..I've worked with many chefs over the years and they all use oil..Take care Phill and my regards to the Mrs t

Onion can be added if you wish but my local takeaway always asks me if I want onions with my salad and are normally sold  separately...I find a lot of people ask for salad but with no onion but I love them    So I think that might be possibly the reason they are not added to the initial salad   Other takeaways probably have them in the salad but not in my takeaway   Hope that helps ..Alex
