I think to make money running a curry business you would have to really devote your and your families lives to it. Take Az as an example, he works 7am - 5pm in the wholesale warehouse that he owns Mon - Fri then it's of to the takeaway to cook and manage from 6pm - 8pm, then over to the restaurant which then starts getting busy to work from 8pm until sometimes 2am if its a Fri or Sat night. I think he gets Wednesday evenings off and Sundays during the day, unless a chef calls in sick in which case he has to work. His wife also spends probably 20 - 30 hours a week looking after the running of both establishments. That's a combined total of around 100 hours a week they put into it. Sod that for a laugh!

Mine seem to be coming through quite well. I put one tray underneath a radiator for a few days and now have an almost 100% success rate. The heated propagator is only getting about 70% success.

I'll speak to Az and see if he's up for running another one, I'm sure he will. I'll see if I can get some dates sorted but it will probably have to be either 25th March or 15th April.

I'll ask about an advanced course too for those who just want to cook main dishes.

Read a couple of reviews, and it unfortunately does not sound very promising :(

As I assume you knew that the important part of Solars quote was the bit about using an onion puree as opposed to a base sauce. Assuming the guy has >10 friends there is a good chance a lot of the 5 star reviews are from them. The negative reviews usually give a lot more useful information than positive ones.

Tell her you will try using Veg Ghee instead and that it's basically just crushed vegetables and you think it's one of your 5 a day ;) Maybe she will even believe you!

When I make it I usually start by GENTLY frying the green peppers and onions in a bit of garlic ginger paste. I then put them to one side for later use.

I usually singe the spices in the ghee before adding the tomato paste, I then re-singe in the tomato paste before adding the chicken, peppers and onion and a big ladle of base sauce plus the massala paste. My biggest tip would be just keep calm and be brave. Everything in the video looked a bit rushed and panicky.

With the garlic tarka, add a bit of sauce from the curry pan to the garlic pan just before it's done. If you have a gas hob this will give the big flambee :) Mind your eyebrows!

Hope this helps. One day I'll get round to doing a vid myself. Maybe Solar will come round and do the filming!

This years crop is in the propagator as of this morning. I planted mine way too late too and they didn't come through at all until about July!

This year I have gone for mainly Khorika Jolokia and "Curry" chillies with some Naga Vipers and Trinidad Scorpions (1.5 million scoville) thrown in for good measure. Oh and a couple of birds eye chillies left over from last year. I'm hoping they come through nice and early giving a long harvest.
