The methi gosht at my local is made with dried methi, about 1  rounded chef

That looks great Bengali Bob. I've found mustard seeds in some methi versions. The addition of pre cooking liquid/oil is a must for me now after seeing it done. It's changed the whole approach now

Echo that. Hope to get a few pics from my local.  I am nearly there with the pre-cooked recipes; just need to find some time to prepare some at home.
