As I know you lot are foodies I'm sure some of you have a recipe for this (hopefully online so you don't have to type it out  :D)

I've tried a few and done some nice ones but can't remember where I got'em  so if you've got a tried and tested recipe I'd appreciate you passing it on.

Oh, ta, I'll give her a nudge to see if she can offer any decent tips/recipes, I love Tex Mex, it'd be great to cook meat in the big smokers for 10 hours like you see on the T.V, I'll bet that meat is devine.

I've not tried the below recipe, but it won the BBC One Show Chilli Champion Cookoff recently, so may well be worth further investigation:

Hmmm, leave out the cacao and celery and it has all the makings of a good chilli con carne, but "grated Cheddar cheese" to garnish ?  Surely not.  Cream cheese or cr

I'm with you on the celery, but I do add cacao when the mood takes me. I was interested to see that there's no coriander or cumin powder used in the no.1 recipe is this is something I always use and assumed was essential.

I'd go with chedder cheese and creme fraiche, personally.

Ooh, I failed to spot the omission of the cumin :  that is indeed a standard ingredient in chilli powder (as opposed to ground chillies) for a blend intended for use in chilli con carne.

This is my version of chilli ;)

2 tbs veg or corn oil
4-5 onions, finely chopped
4 garlic cloves, crushed
3lb chuck steak, cut into bite size cubes (I suppose you could use stewing steak if you want)
5 tbs chilli powder
1 tsp dried oregano
2 tsp dried cumin
2 dashes tabasco sauce
3 tbs tomato puree
12 fl oz beer

1 heat oil in a saucepan, add onions and garlic until softened, add the beef cubes and brown on all sides, stir in the remaning ingredients and bring to the boil. cover and simmer for 45min,

2 uncover the pan and continue simmering for 20-25min or until the meat is tender,

3 taste and adjust the seasoning, serve hot with rice and red kidney beans
or with chips as phil say's :D
This one is for grown up's ;)

we make chilli pretty much every week.

ingredients:

beef mince & water to cover   450g
chopped onion 2 off   
tin red kidney beans (rinsed)   400g
lea & perrins 12 sec pour
dried crushed red chilli   2 tsp
water (for oven pot with lid) 200 ml
black pepper 1 tsp
tom puree   2 htbsp
chopped garlic 2 cloves or 2 tsp paste

method:
cover beef with water & microwave full 5 mins drain to remove fat
oven pot and lid bake 180C for 1 to 1.5 hrs (till condensed)
serve basmati rice
ice cold cider from freezer
ideally soft made garlic bread
