Thanks all.

Goncalo.  Another great result mate.  8)

Chewy. Not guilty your honour! No food colour in this one.  Anyway, it's basically your madras sauce recipe, minus the Leas & Perrins.  8) The nut blend was coconut flour, cream and oil (all KTC), with single dairy cream (the free pot that come with Tesco strawberries).

...or even creamed coconut and a wedge of lemon. yum.

I made this tonight using Chewy's Madras recipe as a base, but using pre-cooked beef with some of its gravy, exchanging the Worcestershire Sauce for 4 tbsp of coconut cream and adding loads of fresh coriander. Absolutely delicious, as testified to by my good lady wife who cleared her plate! No pictures as I was in a hurry to devour it, but thanks to Mike for the excellent base recipe and to Bob for the coconut twist. :)
