Apologies Chris, forgot about you here ;) Afraid i don't really have a recipe, but I do a thing which is basically that Bombay Aloo Stephen mentioned above, but with a couple of onions (one chopped fine, one chopped chunky) and a can of chickpeas. The latter is 'solid' and filling enough to turn it from a side dish to a mains, know wot i mean?
