Hello Michael. Could I ask, Where did you obtain the Malaysian curry powder which is called for in the Singapore chow mein recipe? This is one I'm struggling with

any mild madras curry powder will do. White pepper adds loads of heat. Malaysian curry powder for curry paste to  make a sauce. Yeo's 50gm is smallest I can find

Had my Pizza evening course on Friday  in London Marylebone lane
Wasn't expecting too much as it was for only an hour and half
But it was worth the effort our dough balls were already made up because they obviously need to prove
The pizza chef made a dough up to show how they were made ( 00 flour water salt and Fresh yeast)
All standard stuff really
The tomato sauce was simply blended canned Italian toms lots of salt bit of olive oil and dried oregano
We all made our own pizzas He couldn't emphasize enough spread tom sauce thinly and less is more with ingrediants 2 or 3 toppings
we were using domestic ovens and the best tip was you don't need a pizza stone just turn your oven trays upside down and slide your pizza on top to cook on
Im not a huge pizza fan this was a present for me because Im building a wood fired oven in my garden at the moment so it was handy gift

Sounds good Michael. I'm definitely going to have a go and the upturned baking tray would be a good start.  00 flour indeed, whatever next..... train sets?   ;)
