Cardamon Clarification
« on: November 15, 2014, 01:31 AM »
Hi,
Just joined.  Thanks for all the great advice.  I found a recipe for Curry Powder. It asks for "1 Part Cardamon"...does this mean Cardamon Pods or Cardamon Seeds ?

3 parts Fenugreek
2 parts Cumin
2 parts Coriander seeds
2 parts Turmeric
1 part Cardamom
? part Clove
1 part Dried Chilli
1 part Mustard seeds

Thanks.

If all the other spices are whole, I'd suggest using whole pods. It wouldn't hurt to just use seeds or ground.

If it was me I'd "de-husk" the seeds first but I've known others to say they have chucked them in the grinder whole especially when making garam masala. It's down to personal taste really. It looks an interesting powder though. It may well be on my to do list. Where did you find it?

PS. Is it fenugreek leaf (methi) or fenugreek seed?

Hi,  Thanks for the responses.  I got this from a site called "How to Cook Great Curry",  Under "Curry Powders".

Ironically I couldn't find the curry powders link, but, at a cursory glance that's not a bad site.

Thanks Phil- I meant to add, that that powder looks very heavy on the fenugreek compared to one of our mixes, where the primary spice is tumeric and coriander, say. Has anyone tried this one?

I've not tried it (yet) but whenever I open the fenugreek jar I am transported to BIR heaven.  For me, the smell of fenugreek /is/ the smell of BIR.
