I didn't start the day intending to make a curry for dinner, but as luck would have it, I was browsing through Mick Crawford's 2nd BIR Style Cooking ebook and his South Indian Garlic Chilli Chicken recipe jumped out at me. I've got a couple of versions of this dish stashed away, but I'd never tried Mick's take on the curry.

On the side, I cooked Mick's Mushroom Fried Rice (using SP's pilau rice recipe) and threw together some of his Mint Yoghurt Sauce to dress the salad. Both of those recipes are from Mick's 1st BIR Style Cooking ebook.











Verdict? Very nice indeed! Both me and my good lady wife wolfed the curry down and these recipes are now firmly on the favourites list. It worked out very well and had a nice, light consistency and plenty of taste without being overcomplicated. Just what I needed after last Friday's disappointment. :)

The Mushroom Fried Rice and the raita were both pretty decent too and complemented the curry nicely. Another two recipes printed off for the ever-burgeoning folder!

Note: A wee confession - I didn't put any fresh chillies into the curry out of respect for my good lady wife's delicate tastebuds, but I did add a couple of generous teaspoons of Mr Naga to mine once everything was plated up. I think it would have tasted better with the fresh chillies, but hey ho, beggars can't be choosers!

I should also mention that Mick's curry recipes specifies the addition of butter ghee. It's not something I keep around the place as I was put off it a long time ago when making 'Mumrez Khan

Looks Lovely Naga. Just the consistency I aim to try to achieve with my dishes these days.

Naga that's the best looking rice I have seen in a while, for me good rice and good bir flavour in rice is 50% of the struggle.
Well done on your kick ass looking food 8)

Naga would you mind me asking your oil ratio for the rice?

Those macro photos certainly get the appetite going.
Mushroom Pilau, got to be my favourite at the moment.

What type of coconut did you use in the curry, and how much?

LC, I'm not sure if you mean the oil ratio for the original pilau or for the mushroom fried rice.

SP didnt actually give quantites - just ingredients and technique. I went with mickdabass's suggested quantities which, for me, was 150ml oil to 575-600g basmati and 750ml water.

If it was CBM's Mushroom Fried Rice, Mick suggests 3 tbsp oil to a single portion of pilau. I thought I'd quite enough oil going on between the curry and the pilau, so I reduced the oil to 2 tbsp for a double portion (350g cooked pilau for me) and it worked out fine.

Just post up the full recipe ingredients without quantities. Perfectly acceptable way of doing things and breaks no copyright.
