Chicken patala
« on: October 05, 2015, 09:12 PM »
Not everybody's cup of tea I know but i had a request for a couple of CTMs from a work colleague who is soon moving on and whom i've worked with for a number of years.  In exchange for these I received a rather lush tart moist lemon drizzle loaf cake.  WOW, this is some cake  :P :P :P
After a long break from the kitchen and cooking curries what better way to ease myself back in than with this dish.   Although this dish is not one i'd ever consider ordering I have tried several over the years just to get an idea of the "ball park" CTM - and what a difference there can be  :o . Anyway, there are plenty of acclaimed recipes out there for enthusiasts to try which don't vary much from the recipe I use so i've no plans currently to post mine.
However, this did provide me with the opportunity to cook and write up my chicken patala recipe which i will post a little later in the week with required porn ;D.  Not a dish i've ever come across in the UK but very common place in the emerald isle.  Whilst similar to a CTM, it is far richer with more tomato flavour, more savoury rather than sweet with a  lovely buttery taste and smell.  More about that later.  Anyway, a pic of my CTM and the infamous patala, which is to be accompanied by my keema rice and a chana masala, which i will post the recipe for if anybody is interested.  Again, I doubt there will be any surprised as to how it is prepared for the old hands  :)

The CTM

The patala and a  close up

Whilst neither curry appeals to my taste I did add an extra bit of tikka to each to sample my efforts and confess to having cleared up any remaining sauce in the pan after cooking each of them  ::)
So singe baby singe, the curry's getting better ..........

Nice to see you back in the kitchen, Dave! I don't mind a CTM, but it wouldn't be top of my personal list. The family, on the other hand, would definitely give it a go so I look forward to you posting the Patala recipe.

The photos show you haven't lost anything in the curry-making stakes at any rate. :)

Of more interest to me is the lemon drizzle cake recipe. I know there can only be so many variations on a theme, but if you care to share the recipe I'd be keen to try it out!

I echo what Naga says......great to see you back in the kitchen and posting  :)

I would welcome your CTM recipe, bud, as I haven't found a decent one and it's a dish which is missing from my repertoire.

Cheers guys.  Keith, i've already requested the recipe so i'll be in touch.  Garp, have scribbled down my CTM recipe, just need to write it up properly.  I'm sure it won't be anything new to you but i'll suggest some tweaks that can be made to get it somewhere near where you want it to be.  To be honest, it's as good as any i've tasted with the exception of the dish we tried, cooked at Zamaan in Dachet when Natterjak, JB and myself went over there for a lesson.  I would easily have eaten that dish and enjoyed it and never known it was a  tikka masala.  Shame we didn't watch the chef cook that one.  It was a divine curry  :P :P :P :P  The chef sure did know his stuff.

And a couple of more pics  :)
The channa masala done, and ready for crating up

And the double portion of keema rice

So singe baby singe, the curry's getting better ..........

Me too, i can't find any pictures/recipes for this dish, very intrigued indeed, seems like a Butter chicken gravy but creamy with extra garlic, tomatoes fresh/tinned, i don't know, onions and mixed herbs.
I did find one recipe on youtube but restricted video, Dal Patala, because of something called Prism.
Anyway really looking forward to this recipe.

I think there may be the translation of words on this one - will have to wait and see wait CH turns up....
However until then - try Chicken patiala
This might be the one we are waiting to try out.
Images wise many variations as you would expect from an Indian type dish

i can't find any pictures/recipes for this dish, very intrigued indeed...
And that's exactly where i found myself when my niece asked me to make said chicken patala :-\  It took a few samplings of her dish in the restaurant on several occasions, which i had to pay for  :(, and a few hours in the kitchen before i got the final seal of approval  :D  And given that she is a very fussy little creature when it comes to her food, for her to say it's as good as the restaurant's, I know i'm pretty close  :)
As for your description of the dish UF, i think you've summed it up a treat.  Ultimately, for those who prefer the mild, creamy rich dishes, i think it could easily be classed as a  type of tandoori butter chicken.  Quite possibly, it could have a regional equivalent like the punjabi masala north of the border.  Who knows?  I'll try and get it posted as soon as with some pics, and await the critics' feedback  ;)
So singe baby singe, the curry's getting better ..........
