First ever base sauce
« on: January 11, 2007, 02:02 PM »
This is my first ever attempt at a base sauce. I followed Jaspers recipe, but wondered if it should look this dark or not. Ive noticed that most peoples bases are more of a yellow colour.

Looks good to me, in fact my attempt came out slightly darker. There's quite a bit of tomato in it which makes it dark. It's a pretty good base, very much along the lines of Kris Dhillon's, nice and simple, not too many ingredients.

I think if I made it again though I would initially fry the onions in lots of oil before adding any liquid, it seems to add a certain something which I personally prefer.

Well done on a fine base!

You can always now modify the recipe to suit your own requirements, but that look like it will give you a great start to this quest.

the colour looks very similar to the picture i posted in the previous post,i also put in a 5star,small piece of cassia bark and 6 cloves, just preference really, but would not have added to the colour of the sauce, well done.
