Curry Kit?
« on: March 09, 2005, 01:34 PM »
Firstly, these recipes are amazing! Thanks for the inspiration. On to the meat of the question.I am new to all this, and would like to build up a basic spice "kit".Should I search for a complete kit,or make my own?.We have an Asian Supermarket/Wholesalers about 5 minutes away,so they should stock everything. What would you"seasoned" (pun fully intended :D  ) veterans suggest.

I suspect the restaurants use nothing more than the following to make virtually every curry:

Curry powder (I use the restaurant masala from the curry house cookery in the ebook section)
Chilli powder
Salt
Sugar
Lemons (whole or juice)
Garlic paste
Ginger paste
Pasata
Fresh coriander
Fenugreek leaves (dried)
Ground almonds
Creamed coconut
Single cream

HI,

I bought something similar to this starter kit when I started out:

http://www.memsaab.co.uk/ingredients.htm

You get most of what you will need to start of with.
