Treacle brittle (with an Indian twist)
« on: April 28, 2020, 07:19 PM »
Spurred on by my success  at "re-making" some Thornton's Special Toffee, and missing (as do all true Britons) Callard and Bowser's wonderful (and irreplaceable) treacle brittle, I set out to make my own, but lacking any Muscovado sugar I used instead the same quantity of jaggery ghoor.  The results were excellent, but I could not help but wonder whether they might have been better had I used Muscovado, so today I decided to make another batch, this time using Muscovado which I had in the meantime acquired.  And now that I have made it, I prefer the version using jaggery ghoor !  It is more bitter, and really gives the toffee a punch, whereas today's batch is simply "OK".
