I just made another batch of my own recipe Instant Pot base and while blitzing it, I had a moment of clarity. The smell of my base just brought back a memory.

Potato chips and curry is a very British concoction. We have chips 'n' gravy but I'd never seen or heard of using curry gravy till finding this site.  CT used to post photos of his curries often with chips.  My research showed that British curry gravy served with chips is sweeter fruity curry sauce.  I made it and it is quite good.

My local T/A (not Indian) has about 30 different chip dishes, including peanut butter and jam. The owner tells me it is quite popular.
