Most Important Cooking Method

The most important cooking method IMHO is to cook your meat dishes the day before and leave them to sit in the sauce for at least 24 hours.

The taste really improves with age.

Bit of a b*gger if you're waiting in a restaurant at the time though!  ;)

(though I suppose they are doing this, to some extent, with pre-cooked meat)

I find all my curry's improve over night and when reheated the next day, can't say the same for all restaurant curry though.
