Favourite chicken tikka recipe

Hi, can some kind person advise on the best chicken tikka recipies on this site? i thought its about time i made one of these. it will make a nice change from my last few months efforts trying to crack the madras recipe. cheers DD

I think I've posted enthusiastic feedback on that thread months/years ago. If anyone knows a better-tasting tikka recipe I'd like to try it. There may already have been some 'spin-offs' / derivatives of that recipe but for me it's the original real-deal!

Agreed with the above that Blade's is the best tikka recipe here.

I do replace the Patak's Tandoori paste with their Patak's Tikka paste. I just feel the tikka paste gets the taste closer to BIR. Personal opinion.

i have added a couple of tweaks which i seem to like but honestly the as spec is brill.

i'll add the tweaks under the original recipe

I think I'm correct in guessing that:

CA tikka = Blade tikka + tweaks
Therefore:
JerryM tikka = Blade tikka + 2 lots of tweaks!

The big difference is the use of yogurt, or lack thereof.

I've found that since deleting the yogurt from my tikka (a la Blade) the result is "better than BIR". I realize that yogurt in tikka is standard practice, but I feel 100% sure it tastes better without.

I think I'm correct in guessing that:

A curious comment George  :-\

If you actually compared the two recipes (rather than guessing) you would see that this is clearly not the case.  There are significant differences between the two recipes:

  • Blade's uses Pataks Tandoori Paste whereas mine uses a made up tandoori masala
  • Mine uses yoghurt whereas Blade's doesn't
  • Mine uses fresh coriander whereas Blade's doesn't
  • Mine uses tomato paste whereas Blade's doesn't
  • Mine uses milk whereas Blade's uses water
  • Blade's uses ginger whereas mine doesn't
  • Blade's uses fenugreek whereas mine doesn't

In fact, the two recipes probably couldn't be more dissimilar if you tried!  :P

I don't think anyone can justifiably say which tikka recipe is "the best" unless they have tried them all.  I suspect very few members have.  I've tried mine and Blade's only. 

George, Stew and Josh - please can you put your comments into context by telling us which other recipes you have tried besides Blade's?

Yes, Blade's recipe has had many rave reviews, from those that have tried it, and is clearly worth a try.  But I'd caution against dismissing any of the other tikka recipes as a consequence.

i'm afraid that's the end of the contest for me.

i flirted with pataks a few months ago. i was getting so many CA tikka requests that i looked for a short cut and pataks seemed worth a try. interestingly on the jar it says don't taste it - of course i did - awful.

the family rebelled saying they were being sold short on quality for speed.

fresh is best for sure.
