Fresh Tomatoes

I have found that putting some fresh Tomatoes in  a batch gives it a very nice flavor & makes it closer to my local Take-away. I put 2/4 in a 3 Curry batch anyone else do this to achieve a closer copy ??
Again it looks as though my local uses a lot of fresh a good quality ingredients(remember the Spring onions in the Vindalloo/Tindalloo !!).
So it may not help most of you, but please do try it & let me know or if you have be4fore ,let me know your results.

Depends what curry you are making, ive never had a vindaloo with fresh tomato in or spring onion but the chicken korai which my new local serves up has both, nice it is too  :)

One Indian take away I went to used quite a lot of fresh tomatoes in a lamb rogon josh, added towards the end - but none of their food is very good - so perhaps it doesn't say much!

i think fresh tom's in any cooking batch will outshine any tin's.. this is just my opinion ive never tried it in my base mix but think im going to. for the simple reason my mother make's a fantasti chillie con and she use's fresh cherry tom's and ive never had anything so good tasting apart from me currysin me life , so i'l be trying this in me next batch of base. after all u cant beat fresh ingrediants CM

Too right a Curry with fresh Tomatoes does have a more sharp defined taste as opposed to a more subdues taste from the tinned Tomatoes.

Depends on the curry.

If I'm doing a patia or a balti I might add a few chunks or slices towards the end of cooking. I sometimes add it to Aubergine curry, chickpea and sag aloo.

I like to puree fresh Tomatoes & Green Chilies instead of using tin Tomatoes & Chili powder sometimes, although it can change the characteristics of a Curry. But its nice . :)

& it also give you a little variation in taste. ;)

I always add 1 or 2 quarters of a tom when i make a madras, always adds something speacial for me to the final dish.
