Chefs Knives

Hi,

intersted in the range on knives that you guys use......ive tried a few different from global and have 3 porche knives.

any recommendations on what you find best?

I bought a set of 6 Globals in a block from Costco for ?169. Its one of the best things I've ever bought.

last year santa got me a full set of carl weill knives, steak set the lot. best knifes ive ever used. not cheep you wont get much change from £600.00 for a full set  :o

Thought I would post a thread as i was genuinely interested in what others used for cooking and their own knives......I was sharing knives from Txmax.....my...thread...was basically to ask others here what opinons were of knives.

I use Victorinox knives, I prefer the rosewood handles ( but EHO dont), They make Microban handle knives that are good for cleaning.

These are a good all round knife and not too costly if someone else picks it up by mistake and never to be seen again.

With the Globals some of them were breaking or getting rust spots, I think they were sub grade or fakes. Not sure if this is still the case. I would recommend buying from a reputable catering supplier.

My lovely wife bought me this gorgeous  SANTOKU RAMSAY LIMITED EDITION 170mm blade length knife specially made in japan by a master knife maker Mr Takamura with Ramsays signature on the blade and layered 32 times with Damascus steel and a VG10 core- and when i say sharp boys - you can shave with this baby!!,

I bought a set of Henckels Twin Cuisine knives after being recommended them on here. I love them. They are quite heavy which I like and are still very sharp. I've tried Global, they seemed ok, just too light for me though & I don't think they suit my reasonably large hands.

I actually have a Sabatier chef's knife which I tried again very recently. I was very surprised how good it still is.

I'm basically a pikey, I use Stellar Santoku style knives and a couple of German style ones. That's it, nowt posh!
