help
« on: May 29, 2010, 06:30 PM »
Hi all,
I'm new to cooking curries and want to cook a rogan josh I've found in a cook book. The problem I'm having is where do I get all I need? A blade of mace, cardamoms the rest I can get from my local supermarket. I hope someone can help me with this
Thanks Mandy.

Hi Mandy,

It sounds like your trying to cook a traditional style Rogan Josh, ie; no base sauce?

Here is a link to a more British Indian Restaurant (BIR) style.

http://www.curry-recipes.co.uk/curry/index.php?board=57.0

But if it is the more traditional style that your looking for, then most asian stores will have them.

Are you based in the UK Mandy?

Ray :)

As recommended by Axe, http://www.spicesofindia.co.uk/ is your best bet. I and many others use them and they always come highly recommended.

A blade of mace, cardamoms the rest I can get from my local supermarket.

If you mean an Asian supermarket then you should be fine, but I would steer clear of spices, etc., from the likes of Sainsburys and Tescos (unless they have an Asian section, of course).

Unclefrank/mandybabe,

good to know the west mids support is growing. i used to live in brierley hill.

on the jalfrezi my fav is admins http://www.curry-recipes.co.uk/curry/index.php/topic,2664.0.html.

on the mace i'd drop it off the list for a while - it's not a key BIR taste. the cardamom u'll get from asda.

up the baggies
