Spice substitutes

Trawling through the web I found the site linked below which offers a number of spice substitutes if you have something missing.
Without trying some of these combinations and replacements I cannot be sure how close they would be to what they are intended to replace.

I have the exact opposite need. My pantry has way too many spices! 😊

I have a tote box full of spices in my kitchen - 27 spices, and a handful of herbs and other things like besan flour.

I have another tote box in the basement of spices.

... I may have a spice problem....

A spice problem….I’ll just leave this here. At least I’m a little organized.

As regards the age, Phil. The only dated thing I can find is from the time Romain was active in the forum.

I’m pretty sure there are a few bags of stuff older though.
It’s a healthy obsession, I find.

Robbo, I notice you have mixed Coriander / Cumin Powder.  I've seen it for sale at the Indian grocer but never saw the point.  Do you use it frequently and is there any benefit in having it pre-mixed?  I assume it's 50 /50.

Hey Livo
Impulse buy. I think the ratio is more like 2:1 in favor of coriander. Need to dump it and put the container to better use as I never use it. Also need to get my lazy backside moving and make a good batch of garam masala. And some base.  And many other things….

when I make a big batch of base I pressure can it, and freeze the few that don't seal properly. It manes I have at present.... 27 batches of base gravy? Something like that. I get a lot of return from one morning spent canning.
