Hi Will,

Mangal is the brand name, kitchen king masala is a spice masala very similar to most of the spice mixes on here.  It's readily available at most Asian supermarkets but if you can't get hold of it, then go with whatever spice mix that you normally use.

As for the skewers, again, I got them from my local Asian SM, GBP 1.50.  If they don't stock them, ask the people, and I'm sure that they can get you some in, though you may end up paying slightly more than I did.

Just noticed those : they are superb.  I assume GBP 1-50 each, though, and not GBP 1-50 for the eight shown !

Hi Ray,
Although this is a picture of my chicken tikka it is much more like the colour of chicken tikka in my area, more orange rather than red or yellow.
You will notice no skewer holes....if I'm cooking a large batch of tikka to go in curries then I simply lay them out on a tray and cook under the grill or sometimes in the oven.
If I'm doing it for starters then the chicken will be skewered.

I have now edited the recipe with regards to the food colouring, as it seems to be attracting more attention than the actual recipe, lol.

Please, use whetever colour best replicates your local favourite TA or BIR :P

Hi Ray,

I made a batch of this today & sneaked some for my lunch,  I enjoyed it but it was a little too sweet for my taste, so next time I will use the hotter mango chutney.  I feel the marinade works really well but as I said, it was a little sweet for me.  I made up the rest for dinner & the wife & daughter preferred it to my usual ::).  So it looks like I have to make 2 batches next time :-\
