Tried and Tested BHUNA Recipes please.
« on: January 08, 2012, 05:07 PM »
Hi All

In my pursuit of being able to cook a full curry menu to a good standard, my next curry of choice is a BHUNA!

I like to do my own group tests on 5 or 6 well recieved recipes to decide which one suits my palate.  What would anyone recommend.  Not any average ones but takeaway beating ones!

I am going to make my own, 976's, CA's and any others that can be recommended!

Having not had a bhuna for ages i got one last night from my local TA which does a fine rogan josh so I keep going back.  The bhuna was bland and had far too much sauce for a bhuna.  Disappointment :(.  Just goes to show that although you think your favourite takeaway is good, their will be dishes from their menu that you do not rate!!!

Regards

Barry

Hi Barry
Try my Chicken Tikka Lao recipe, a 100% BIR Bhuna Dish cooked at home.
Extra time taken, to show the Tarka and Bhunao techniques of BIR cooking, that
some people find hard to grasp, which if learnt correctly will give that sought after
"Toffee" and "Smokey" aroma and flavour.

If your not keen on Lao/Butternut Squash Barry, use your favourite vegetable
or just omit it, and reduce your cooking time to about 7/8 minutes.

Well worth a try, Self recommendation ;D ;D
cheers Chewy

Thanks Paul, give this a go mate, an extremely good curry,
which I created for a restaurant about a year ago.
The Chef uses Duck Breast, but his version is even drier.
Very popular on the expensive side of the menu, Kadu Batakh
