Biryani is it just fried rice with an Indian spice
« on: February 21, 2012, 12:34 PM »
Is take away or restaurant biryani just a version of fried rice with Indian spice?

I've been experimenting with Biryani ie; Chicken Biryani etc but want to make it quick quick like a T/A's

What do we all think - and has anyone got a fool proof biryani recipe? And obviously NOT being cooked slowly in a pot in the oven!!

best, Rich

Yes it is really.

Here's a good demo, shouldn't be too hard to follow

Hi Rich,
I've cooked biryani many many times and it couldnt be simpler.
And yes, BIR biryani is just fried rice and shouldnt be allowed to be called biryani.
Why anyone would want to replicate this is beyond me, but each to their own eh.  :)

Try this guys method and you wont stop smiling  ;D

Hyderabadi Mutton Biryani

Cheers, Frank.

I had a BIR lamb biryani a few weeks ago. To my surprise it came with a boiled egg cut into quarters. Years ago the eggs were always more like scrambled eggs.

My wife and I really enjoyed it and yes it came with a vegetable curry sauce.

Cheers,

Paul

i've settled on dipuraja's as the best i've come across.

i now use 1 tsp methi and have added in 1 htbsp coconut flour per person.

there might even be a tad reference to singeing

BIR style biryanis have always been one of my favourite dishes. Even the rice and meat mixture alone is a fair bit more sophisticated than simple 'fried rice'. The last time I had it, I watched the preparation from a distance and was quite surprised how much is involved. In summary, first he made a 'curry sauce' of some kind just as you might make any other dish, like chicken madras or anything. Then he added the rice and followed up with yet more spices and other ingredients. The great taste of the end result was up there with the best, so I'd say it must be the way to go. The video of the Hyderabadi biryani might taste great but that approach is more traditional and nothing like a BIR would use.
