Your right there Chewy my  tandoori oven is probably the best man toy I've brought
so many marinades to try and dare I say not only from India  :)

Now I know your probably ignore the negative last post
But my advice is just mention piccalilli that normally keeps the paper hat quiet  ;) ;D

Just finished building my own Tandoori oven a la Jimmy Doherty style (jamie Olivers farming m8) - inverted plant pot in a bin route - charcoal fired.

Await the 1st suitable firing up - will probably go for tandoori lamb chops and chicken tikka.  I also reckon it will be a good way to do a version of the lamb shawarma meat - with of course naan bread via the tandoor.

Galvanised 90L bin off fleabay - ?16 delivered, 20 litres of perlite - ?10 - had all the rest to hand - ?26 for the oven built - ?35 for 5x square stainless 1 metre long professional skewers.

Instead of using firebricks and the laborious task of cutting to shape, I used a lightweight aggregate concrete mix for the base within bin and lip to hold pot - made with Secar 71 heat resistant cement (as used in foundry work and good for 1000 + deg C).

Thanks for the good comments  :D ;)

G. My original marinade/method recipe for Tandoori is here :
http://www.curry-recipes.co.uk/curry/index.php/topic,13620.msg115768.html#msg115768

The luxury of cooking at home is to take an authentic restaurant recipe and improve it
and take it to a much higher level.
My two stage, freezer bag method works so well for tenderising and getting the flavour into the meat.

For the interested cooks, its well worth a try! ;)
cheers Chewy

.... aaaaaah - too late CT - I have made up a batch of tandoori chops & tandoori chicken using a recipe online from Delhi - http://www.foodandwine.com/recipes/luscious-tandoori-lamb-chops/email - nutmeg & mace in this one.

............... plus a batch of my own version of the Dubai Ravi chicken tikka

Marinading right now for the grand opening /firing up of my Jimmy Doherty style Tandoor oven on Monday - Bank Holiday.

Fingers crossed it goes off OK
