Good to see a video of how it's done at the Viceroy Brasserie and probably most other BIR's and TA's.  Has been covered before on the forum here and in one or two other threads:

Nice touch though,  the flattening with a tray on a tawa  :o . I must give that a go next time i cook some up.  I may be be able to  get even more in my tuppaware box  ;D

I prefer my poppadoms curly as they're much better for scooping up condiments  :D

I had a friend who used to do that (crumble them onto the curry) when we were in our teens (50 years ago); he stoutly maintained they were condiments and not a snack.  I have never seen, nor heard of it being done, since then until today.
